1. Graham Cracker Crust Yields: One 9-inch (23-cm) crust
Ingredients:
Graham cracker crumbs:Â 1.5 cups (150g)
Salted butter (melted):Â 6 tbsp (85g)
Granulated sugar:Â 1/4 cup (50g)
Molasses:Â 5g
Cinnamon:Â Dash
Instructions:
Preheat: Set oven to 350°F (175°C).
Crumb:Â Pulse graham crackers in a food processor until they reach the consistency of coarse sand.
Mix:Â Combine crumbs, melted butter, sugar, molasses, and cinnamon in a medium bowl until well combined.
Press:Â Pour into a 9-inch pan. Use a flat-bottomed measuring cup to pack crumbs firmly but not too tight. Use a spoon to round the edges where the bottom meets the sides.
Bake:Â Bake for 10 minutes, then let cool completely before adding filling.
Cream Cheesecake Filling Yields: Two 10-in. (25-cm) cakes or three 8-in. (20-cm) cakes
Ingredients:
Cream cheese:Â 5 lb (2250g)
Sugar:Â 1 lb 12 oz (794g)
Cornstarch:Â 1.5 oz (43g)
Lemon zest (grated):Â 0.25 oz (7g)
Vanilla extract:Â 0.5 oz (14g)
Salt:Â 0.75 oz (21g)
Eggs:Â 1 lb (454g)
Egg yolks:Â 6 oz (170g)
Heavy cream:Â 8 oz (227g)
Milk:Â 4 oz (114g)
Lemon juice:Â 1 oz (28g)
Instructions
Cream:Â Using a paddle attachment, mix cream cheese at low speed until smooth and lump-free.
Dry Ingredients:Â Add sugar, cornstarch, zest, vanilla, and salt. Blend until smooth (do not whip).
Eggs:Â Add eggs and yolks a little at a time, blending thoroughly and scraping the bowl as you go.
Liquids:Â Gradually add cream, milk, and lemon juice while mixing on low speed.
With a Water Bath: Place in a larger water-filled pan and bake at 350°F (175°C) until set.
Finish:Â Cool completely before unmolding. For pans without removable sides, sprinkle the top with sugar before inverting.
Dark Chocolate Sauce
Ingredients:
Dark chocolate (chopped):Â 4 oz (113g)
Water:Â 2/3 cup (158ml)
Sugar:Â 1/3 cup (67g)
Cocoa powder:Â 2 tbsp (15g)
Vanilla extract:Â 1 tsp (5ml)
Instructions:
Combine:Â Add all ingredients to a saucepan.
Heat:Â Heat and whisk until the sauce is completely smooth.
