Foolproof Cheesecake | EaseCake Live


1. Graham Cracker Crust Yields: One 9-inch (23-cm) crust


Ingredients:

  • Graham cracker crumbs: 1.5 cups (150g)

  • Salted butter (melted): 6 tbsp (85g)

  • Granulated sugar: 1/4 cup (50g)

  • Molasses: 5g

  • Cinnamon: Dash


Instructions:

  1. Preheat: Set oven to 350°F (175°C).

  2. Crumb: Pulse graham crackers in a food processor until they reach the consistency of coarse sand.

  3. Mix: Combine crumbs, melted butter, sugar, molasses, and cinnamon in a medium bowl until well combined.

  4. Press: Pour into a 9-inch pan. Use a flat-bottomed measuring cup to pack crumbs firmly but not too tight. Use a spoon to round the edges where the bottom meets the sides.

Bake: Bake for 10 minutes, then let cool completely before adding filling.


Cream Cheesecake Filling Yields: Two 10-in. (25-cm) cakes or three 8-in. (20-cm) cakes

Ingredients:

  • Cream cheese: 5 lb (2250g)

  • Sugar: 1 lb 12 oz (794g)

  • Cornstarch: 1.5 oz (43g)

  • Lemon zest (grated): 0.25 oz (7g)

  • Vanilla extract: 0.5 oz (14g)

  • Salt: 0.75 oz (21g)

  • Eggs: 1 lb (454g)

  • Egg yolks: 6 oz (170g)

  • Heavy cream: 8 oz (227g)

  • Milk: 4 oz (114g)

  • Lemon juice: 1 oz (28g)



Instructions

  1. Cream: Using a paddle attachment, mix cream cheese at low speed until smooth and lump-free.

  2. Dry Ingredients: Add sugar, cornstarch, zest, vanilla, and salt. Blend until smooth (do not whip).

  3. Eggs: Add eggs and yolks a little at a time, blending thoroughly and scraping the bowl as you go.

  4. Liquids: Gradually add cream, milk, and lemon juice while mixing on low speed.

  5. With a Water Bath: Place in a larger water-filled pan and bake at 350°F (175°C) until set.

Finish: Cool completely before unmolding. For pans without removable sides, sprinkle the top with sugar before inverting.


Dark Chocolate Sauce

Ingredients:

  • Dark chocolate (chopped): 4 oz (113g)

  • Water: 2/3 cup (158ml)

  • Sugar: 1/3 cup (67g)

  • Cocoa powder: 2 tbsp (15g)

  • Vanilla extract: 1 tsp (5ml)


Instructions:

  1. Combine: Add all ingredients to a saucepan.

Heat: Heat and whisk until the sauce is completely smooth.
